- 2 tablespoons olive oil
- 1 medium onion chopped
- 3 garlic cloves minced
- 5 large tomatoes chopped (or 1 can crushed tomatoes)
- 2 cups vegetable broth
- ½ teaspoon sea salt
- ¼ teaspoon black pepper
- ½ teaspoon dried basil
- ¼ teaspoon red pepper flakes optional
- ½ cup cream or dairy-free alternative
Heat olive oil in a pot over medium heat.
Sauté onions until soft, about 5 minutes.
Add garlic and cook for 1 minute more.
Stir in tomatoes. Cook until they break down, about 10 minutes.
Pour in vegetable broth. Bring to a low simmer.
Use an immersion blender or transfer to a blender. Blend until smooth.
