Ingredients
  

For the Chicken:

  • 1 lb boneless skinless chicken thighs (cut into bite-sized pieces)
  • 1 tablespoon oil vegetable or sesame
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • For the Teriyaki Sauce:
  • 1/4 cup soy sauce
  • 2 tablespoons honey or brown sugar
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 2 teaspoons fresh ginger grated
  • 2 teaspoons garlic minced
  • 1 tablespoon cornstarch mixed with 2 tablespoons water for thickening

For Serving:

  • 2 cups cooked white or brown rice
  • 1/2 cup steamed broccoli or mixed vegetables
  • 1 tablespoon sesame seeds for garnish
  • 2 tablespoons green onions chopped, for garnish

Instructions
 

Prepare the Chicken:

  • Heat oil in a large pan over medium-high heat.
  • Add the chicken pieces, season with salt and black pepper, and cook for 5-7 minutes until golden brown and fully cooked.
  • Remove the chicken from the pan and set aside.

Make the Teriyaki Sauce:

  • In the same pan, add soy sauce, honey (or brown sugar), rice vinegar, sesame oil, ginger, and garlic.
  • Stir and bring to a gentle simmer over medium heat.

Thicken the Sauce:

  • In a small bowl, mix cornstarch with water to create a slurry.
  • Slowly pour the slurry into the simmering sauce while stirring continuously.
  • Cook for another 1-2 minutes until the sauce thickens.

Combine the Chicken and Sauce:

  • Return the cooked chicken to the pan and toss it in the teriyaki sauce.
  • Let it simmer for 2-3 minutes, ensuring the chicken is well coated and heated through.

Assemble the Rice Bowl:

  • Divide cooked rice into serving bowls.
  • Top with the teriyaki chicken and spoon extra sauce over the top.
  • Add steamed broccoli or mixed vegetables.
  • Garnish with sesame seeds and chopped green onions.
