Ingredients
  

  • 1 cup sourdough starter discard
  • 1 cup warm water
  • 1 tablespoon brown sugar
  • 2 teaspoons active dry yeast
  • 3 cups all-purpose flour
  • 2 teaspoons salt
  • 2 tablespoons unsalted butter melted
  • 10 cups water
  • 2/3 cup baking soda
  • 1 egg yolk beaten
  • Coarse sea salt for topping

Instructions
 

  • Activate the Yeast:
  • In a bowl, combine warm water and brown sugar. Sprinkle active dry yeast over the water and let it sit for about 5 minutes until frothy.

Prepare the Dough:

  • In a large mixing bowl, mix together sourdough discard, yeast mixture, flour, salt, and melted butter. Stir until a dough forms.

Knead the Dough:

  • On a floured surface, knead the dough for about 5-7 minutes until smooth and elastic.

First Rise:

  • Place the dough in a lightly oiled bowl, cover, and let it rise for 1 hour, or until doubled in size.
  • Preheat Oven:
  • Heat your oven to 425°F (218°C). Line a baking sheet with parchment paper.

Shape the Pretzel Bites:

  • Punch down the dough, divide it into 8 equal pieces, and roll each piece into a 12-inch rope. Cut each rope into 1.5-inch pieces to form bite-sized pieces.

Prepare the Boiling Solution:

  • In a large pot, bring 10 cups of water and baking soda to a boil.

Boil the Pretzel Bites:

  • Carefully drop the pretzel bites into the boiling water in batches. Boil for about 30 seconds each, then remove with a slotted spoon and place on the prepared baking sheet.

Apply Egg Wash:

  • Brush each pretzel bite with the beaten egg yolk.

Bake:

  • Bake for 12-15 minutes, or until golden brown.

Add Toppings:
