  • Pinch of salt
  • cup 160 milliliters whole milk
  • 1 large egg
  • 2 tablespoons 30 grams melted unsalted butter
  • Optional add-ins: mini chocolate chips fresh berries (e.g., blueberries, raspberries), vanilla extract

Instructions
 

Prepare the Batter:

  • In a medium bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and a pinch of salt. In another bowl, whisk together the whole milk, large egg, and melted unsalted butter until well combined. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are fine.

Heat the Pan:

  • Place a non-stick skillet or griddle over medium heat and lightly grease it with butter.

Cook the Pancakes:

  • Using a teaspoon, drop small amounts of batter onto the heated skillet, forming mini pancakes about 2 inches (5 centimeters) in diameter. Cook until bubbles form on the surface, then flip and cook until golden brown on the other side.

Serve:

  • Transfer the cooked mini pancakes to a plate and keep warm until all are ready to serve.
