- 1 cup green or brown lentils rinsed
- 1 medium onion diced
- 2 carrots chopped
- 2 celery stalks chopped
- 2 cloves garlic minced
- 6 cups vegetable broth
- 1 tsp ground cumin
- 1 tsp dried thyme
- 2 bay leaves
- Juice of 1 lemon
- Salt and pepper to taste
- Optional: 1 cup diced tomatoes 2 cups spinach, ½ cup coconut milk
