Ingredients
  

  • 1 cup green or brown lentils rinsed
  • 1 medium onion diced
  • 2 carrots chopped
  • 2 celery stalks chopped
  • 2 cloves garlic minced
  • 6 cups vegetable broth
  • 1 tsp ground cumin
  • 1 tsp dried thyme
  • 2 bay leaves
  • Juice of 1 lemon
  • Salt and pepper to taste
  • Optional: 1 cup diced tomatoes 2 cups spinach, ½ cup coconut milk

Instructions
 

  • Heat oil in a large pot over medium heat. Sauté onion, garlic, carrots, and celery until softened.
  • Add spices and lentils. Stir to coat.
  • Pour in broth. Bring to a boil, then simmer covered for 30–35 minutes.
  • Optional: Blend part of the soup for a creamy texture.
  • Stir in lemon juice, season with salt and pepper, and serve hot.
