Ingredients
  

  • 1 cup unsalted butter melted
  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 2 large eggs
  • 1 cup granulated sugar for filling
  • 1/4 cup all-purpose flour for filling
  • 1/3 cup fresh lemon juice
  • 1 tbsp lemon zest
  • 1 tsp vanilla extract
  • Powdered sugar for dusting (optional)

Instructions
 

  • Prepare the crust:
  • Preheat oven to 350°F (175°C). Mix melted butter, flour, sugar, baking powder, and salt until crumbly. Press half into an 8x8-inch baking pan. Bake for 12 minutes.
  • Make the lemon filling:
  • In a bowl, whisk together eggs, sugar, flour, lemon juice, zest, and vanilla extract until smooth.
  • Assemble:
  • Pour lemon filling over the pre-baked crust. Crumble remaining dough on top.
  • Bake:
  • Return to oven and bake for 18–20 minutes, or until top is lightly golden.
  • Cool and serve:
  • Let bars cool completely. Dust with powdered sugar before slicing.
