Ingredients
  

  • 2 boneless skinless chicken breasts
  • 1 cup cherry tomatoes halved
  • 1 cup spinach chopped
  • 1/2 cup coconut milk or Greek yogurt
  • 1/4 cup chicken broth
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon red pepper flakes optional
  • 2 tablespoons olive oil
  • 1/4 cup grated Parmesan cheese optional
  • Salt and black pepper to taste

Instructions
 

  • Heat olive oil in a skillet over medium heat. Season chicken with salt, pepper, garlic powder, onion powder, and paprika.
  • Sear the chicken for 3-4 minutes per side until golden brown. Remove from the pan.
  • In the same skillet, add tomatoes and spinach. Sauté for 2 minutes until softened.
  • Pour in chicken broth and coconut milk (or Greek yogurt). Stir and let it simmer.
  • Return the chicken to the pan. Cover and cook for 10 minutes until fully cooked.
  • Sprinkle Parmesan cheese (if using) and red pepper flakes. Let it melt into the sauce.
  • Serve hot with your favorite healthy side like roasted veggies or quinoa.
