Ingredients
  

  • 1 lb Yukon Gold or baby potatoes
  • 1/2 cup red onion thinly sliced
  • 1/2 cup cherry tomatoes halved
  • 1/4 cup Kalamata olives pitted
  • 1/4 cup artichokes chopped
  • 3 tbsp extra-virgin olive oil
  • 1 tbsp fresh lemon juice
  • 1 garlic clove minced
  • 1/2 cup crumbled feta cheese
  • 2 tbsp fresh parsley chopped
  • 1 tsp dried oregano
  • Sea salt and freshly ground black pepper to taste

Instructions
 

  • Wash and scrub the potatoes. Cut into uniform pieces and boil until fork-tender, about 10 minutes. Drain and set aside to cool slightly.
  • In a large bowl, combine the cooked potatoes, red onion, cherry tomatoes, Kalamata olives, and artichokes.
  • In a separate small bowl, whisk together olive oil, lemon juice, minced garlic, oregano, salt, and pepper.
  • Drizzle the dressing over the potato mixture and toss gently to combine.
  • Add crumbled feta cheese and fresh parsley, then mix again.
  • Serve immediately or refrigerate for at least 1 hour to allow flavors to meld.
