- 1 lb Yukon Gold or baby potatoes
- 1/2 cup red onion thinly sliced
- 1/2 cup cherry tomatoes halved
- 1/4 cup Kalamata olives pitted
- 1/4 cup artichokes chopped
- 3 tbsp extra-virgin olive oil
- 1 tbsp fresh lemon juice
- 1 garlic clove minced
- 1/2 cup crumbled feta cheese
- 2 tbsp fresh parsley chopped
- 1 tsp dried oregano
- Sea salt and freshly ground black pepper to taste
Wash and scrub the potatoes. Cut into uniform pieces and boil until fork-tender, about 10 minutes. Drain and set aside to cool slightly.
In a large bowl, combine the cooked potatoes, red onion, cherry tomatoes, Kalamata olives, and artichokes.
In a separate small bowl, whisk together olive oil, lemon juice, minced garlic, oregano, salt, and pepper.
Drizzle the dressing over the potato mixture and toss gently to combine.
