Ingredients
  

  • 2 medium zucchini sliced into 1/4-inch rounds
  • 1/2 cup panko breadcrumbs or seasoned breadcrumbs
  • 1/4 cup grated parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • 1 large egg for egg wash
  • 2 tbsp olive oil or for spraying if using an air fryer
  • Optional: Marinara or ranch for dipping

Instructions
 

Prep the Zucchini:

  • Slice the zucchini into 1/4-inch rounds and pat them dry with a paper towel.

Set Up Breading Station:

  • In one bowl, combine the breadcrumbs, parmesan, garlic powder, and Italian seasoning. In another bowl, beat the egg.

Coat and Fry:

  • Dip each zucchini slice in the egg, then coat it in the breadcrumb mixture. Heat olive oil in a skillet over medium heat and fry the zucchini for 2-3 minutes on each side or until golden brown and crispy.

Drain and Serve:

  • Remove the fried zucchini and place them on paper towels to remove excess oil.
