Ingredients
  

  • 6 oz 170g fresh crab meat, picked over for shells
  • 1 cup 240ml heavy cream
  • 2 large egg yolks
  • 1/4 cup 50g grated Parmesan cheese
  • 1/4 teaspoon salt
  • 1/4 teaspoon white pepper
  • 1/2 teaspoon Dijon mustard
  • 1/4 teaspoon paprika
  • 1/2 teaspoon lemon zest
  • 1/2 teaspoon Worcestershire sauce
  • 1 tablespoon finely chopped chives optional
  • 2 tablespoons granulated sugar for caramelized topping

Instructions
 

Step 1: Preheat the Oven

  • Preheat your oven to 325°F (160°C). Place four 4-ounce ramekins in a deep baking dish.

Step 2: Prepare the Custard Base

  • In a mixing bowl, whisk together egg yolks, heavy cream, Parmesan cheese, salt, white pepper, Dijon mustard, paprika, lemon zest, and Worcestershire sauce until well combined.

Step 3: Add the Crab Meat

  • Gently fold in the fresh crab meat, ensuring it is evenly distributed throughout the mixture.

Step 4: Fill the Ramekins

  • Divide the mixture evenly among the ramekins. Carefully pour hot water into the baking dish until it reaches halfway up the sides of the ramekins.

Step 5: Bake the Brulee

  • Transfer the dish to the oven and bake for 25–30 minutes, or until the custard is set but slightly jiggly in the center.

Step 6: Chill Before Caramelizing

  • Remove the ramekins from the water bath and let them cool to room temperature. Cover and refrigerate for at least 2 hours to allow the flavors to meld.

Step 7: Caramelize the Topping

  • Just before serving, sprinkle a thin layer of granulated sugar over each custard. Using a kitchen torch, caramelize the sugar until it forms a golden, crispy crust.

Step 8: Serve and Enjoy

  • Allow the sugar topping to harden for a minute, then serve immediately. Garnish with chopped chives or a lemon twist for an elegant presentation.
