- 6 slices of thick-cut bread cut into small cubes
- 4 large eggs
- 1 cup milk
- 1/4 cup heavy cream
- 1/4 cup granulated sugar
- 1 teaspoon pure vanilla extract
- 1 teaspoon ground cinnamon
- 1/4 teaspoon salt
For the Cinnamon Sugar Topping:
- 1/4 cup granulated sugar
- 1 teaspoon ground cinnamon
- 3 tablespoons butter melted
Preheat your oven to 350°F (175°C). Lightly grease a 12-cup muffin tin or line it with paper liners.
In a large bowl, whisk together the eggs, milk, heavy cream, sugar, vanilla extract, cinnamon, and salt until smooth and fully combined.
Gently fold the bread cubes into the egg mixture, ensuring each piece is well coated. Let the mixture sit for about 5 minutes so the bread can absorb the custard.
Divide the soaked bread evenly among the muffin cups, pressing lightly to pack them in.
Bake for 18–20 minutes, or until the tops are golden brown and the muffins are set.
While the muffins are baking, prepare the cinnamon sugar topping by mixing the sugar and cinnamon together in a small bowl.
Once the muffins are done baking, brush the tops with melted butter and immediately sprinkle generously with the cinnamon sugar mixture.
Allow the muffins to cool slightly before serving.
