Ingredients
  

  • 1 can 12 oz canned corned beef
  • 2 medium potatoes diced
  • 2 large eggs
  • 1 small onion chopped
  • 1 small bell pepper chopped
  • 2 cloves garlic minced
  • 2 tbsp olive oil
  • Salt and black pepper to taste
  • Optional herbs parsley or thyme

Instructions
 

  • Dice potatoes, chop onion, bell pepper, and mince garlic.
  • Heat olive oil in a skillet over medium heat. Sauté potatoes until soft, about 5-7 minutes.
  • Add onions, bell peppers, and garlic; cook until softened.
  • Stir in canned corned beef, breaking it apart, and cook until browned.
