For the Graham Cracker Crust:
- 1 1/2 cups graham cracker crumbs or digestive biscuits
- 1/2 cup melted butter
- 1/4 cup brown sugar
For the Cheesecake Filling:
- 16 oz cream cheese softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
For the Apple Crumble Topping:
- 3 cups apples peeled and diced (Granny Smith, Honeycrisp, or Fuji)
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 cup brown sugar
- 1/2 cup all-purpose flour
- 1/2 cup rolled oats
- 1/2 cup cold butter diced
Prepare the Graham Cracker Crust:
In a bowl, combine graham cracker crumbs, melted butter, and brown sugar.
Press the mixture into the bottom of a springform pan to form a crust.
