Ingredients
  

Almond Filling:

  • Almond flour
  • Granulated sugar
  • Unsalted butter
  • Egg
  • Almond extract
  • Vanilla extract

Cookie Dough:

  • All-purpose flour
  • Almond flour
  • Unsalted butter
  • Granulated sugar
  • Brown sugar
  • Egg and egg yolk
  • Almond extract
  • Baking soda
  • Salt

Toppings:

  • Sliced almonds
  • Powdered sugar

Instructions
 

Prepare the Almond Filling:

  • In a bowl, mix almond flour, sugar, melted butter, egg, almond extract, and vanilla extract until smooth. Chill for 10 minutes.

Make the Cookie Dough:

  • Cream together butter, sugars, and extracts. Add eggs, then mix in the dry ingredients until combined.

Assemble the Cookies:

  • Flatten dough balls, place a scoop of almond filling in the center, wrap dough around the filling, and roll into balls. Press sliced almonds on top.

Bake:

  • Place cookies on a baking sheet and bake at 350°F (175°C) for 20-22 minutes until edges are golden.

Finish:

  • Cool cookies and dust with powdered sugar before serving.
